Journey Inn Clafoutis

A clafoutis is a tart with fruit that can be enjoyed for breakfast, dessert, or as a snack. Choose what fruit you want to use (e.g., berries, stone fruit) and what type of 2-quart dish (gratin dish, springform pan or pie plate) you want to bake it in. When baking, it'll brown around the edges and puff up a little in the middle, but it'll later deflate when cooling. It's simple to make and delicious!

Ingredients

  • 4 eggs
  • 1 cup milk
  • 4 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla
  • 1 cup flour
  • 2 tablespoons sugar
  • 2 tablespoons light brown sugar
  • 1 pinch salt
  • 2-3 cups fruit (stone fruit and/or berries)
  • sliced almonds (about 1/4-1/2 cup)
  • cooking spray

Instructions

  • Preheat oven to 425 degrees. Spray 2-quart dish with cooking spray.
  • Mix all non-fruit ingredients with a whisk until smooth.
  • Prepare fruit by slicing into (roughly) uniform size pieces.
  • Pour batter into a baking dish.
  • Arrange fruit in batter.
  • Bake at 425 degrees for 15 minutes.
  • Add almonds to the top; bake for 15 more minutes.
  • Remove from oven and let rest for 10-20 minutes before serving.
